Workin' It Wednesday

Aloha everyone!  It's been a busy week so far with my sister and her kids visiting us.  They came in on Monday night and we hit the beach early Tuesday morning.  My nephew is 2 and has never seen the ocean before.


He was so excited and played and played and played. Adorable.

They will be here for two weeks, so we plan on having some more fun adventures.


This week I wanted to share how I have been Workin' on some things at home.  I shared on Friday how I am redecorating my daughters bedroom.  We finished painting and adding a few more accessories.  


Her bed needs a few more round long pillows, but this is a good start.



I painted a few flowers, but didn't make it too busy to detract from the elephant.

We added some bling and details to the elephant.




Her glittery curtains over her closet.




All in all I think she is pretty happy with it.


We plan to keep our eyes open for fun accessories to keep adding.

This week I also wanted to share how I have been Workin' on eating right this summer.

A few years ago I started reading about the benefits of Coconut Oil.  You can use it to substitute almost any kind of oil.  I LOVE anything coconut so when I started reading about it I had to get myself some.  


I use it in lots of recipes instead of vegetable oil. 

I am also very sensitive to skin care products, so I started using it as body lotion. It smells so good and gives you nice healthy glow.  I even make my own deodorant with it.  I mix up coconut oil with baking soda.  It is amazing!  TMI?

Well in my hunt for all things I could do with coconut oil, 
I came across a great recipe for Gluten-Free Coconut Waffles.

Since I have more time this summer I whipped up a batch of these on Sunday.


You need all of these ingredients, plus quite a few eggs.


Luckily our hens Martha and Abigail produce enough eggs for our family and then some.


Mix up all of the ingredients


Pour the batter in your waffle maker.


Add some delicious toppings. (Maple syrup tastes yummy too!)
This recipe make 10 waffles which are incredibly filling and very coconutty!


I have also given up Soy Milk. This is my new favorite.  I add it to my coffee and use it in cereal.


I have also been cutting back on my sugar intake and using Stevia to sweeten my coffee and tea.

There are so many little ways you can change up your diet to be healthy and delicious.  

I was unsure if I wanted to share this picture on here, I am a fairly modest person. But my sister snapped this picture of me with my daughter at the beach and I didn't gag or want to delete it.


I have been Workin' out and eatin' right and I have to say at 44 I am happy with the way my body looks.  Not something that I ever said in my 20's or 30's.

  3. Corinna - you look amazing! So proud of all your efforts. I have always been an athlete but I'm in my early 40's and darn that stomach for getting just a bit soft - UGH!!! Been working hard too! You look incredible!!! My inspiration!
